Curry Baked Sweet Potatoes

I love this dish because it’s vegan, tasty, and extraordinarily nutritious.
Title: Curry Baked Sweet Potatoes (Vegan)
Prep Time: 7 min.
Cook Time: 40 min.
Ready In : 47 min.

1 Large    Organic Sweet Potato
                Organic Ketchup to taste (no sugar added, sweetened w/agave)
 1Tbsp     Extra Virgin Olive Oil
                Extra Virgin Italian Olive Oil Spray
                Curry Powder to taste
– Preheat Oven at 350 degrees
– Slice sweet potato

– Rinse slices
– Spray baking pan with Extra Virgin Italian Olive Oil Spray
– Place Sweet Potatoes in baking pan
– Drizzle with Olive Oil
– Both sides should be fully covered with Olive Oil.

– Season with Curry Powder to taste

– Bake at 350 degrees for 40 min.

Meatless Monday: Vegetarian Sausage Omelet

What I Used:

  • Gimme Lean Ground Sausage Style
  • Red onion
  • Portabella mushroom
  • Green peppers
  • Eggs
  • Olive oil

What I Did:

  • I heated a pan and put in a little olive oil.
  • I made a few little balls with the sausage.
  • I added the sausage, then the vegetables, and I added the eggs last.

The end result was not very pretty because I’ve always had difficulty making omelets, but it was tasty.  The gimme lean sausage has a good sausage-like flavor. I’ve used it to make patties before, but I decided to try something different today. I was pleased with the outcome.

Meatless Monday: Morningstar Chick’n Strips Salad

What I used:

Morningstar Chick’n Strips

Spring Mix Salad

Balsamic Vinaigrette

What I did:

I cooked the strips in a pan with a little bit of oil.  They didn’t take long, I just cooked them long enough for them to get hot.  I added them on top of the spring mix and added dressing. 

The strips kind of look like actual grilled chicken strips.  They were lightly seasoned.  The flavor was okay, but the next time I would add more seasoning to them.  The texture was good.  Sometimes I am turned of by non-meat meat because the texture is weird.  I would definitely have this one again.

Meatless Monday: Meatless Italian Sausage, Peppers, and Beans

This was actually my meal from last Monday, but I forgot to add it. 

What I Used:

Trader Joe’s meatless italian sausage

Frozen pepper mix (red, green, and yellow)

Red beans

What I Did:

I was really just experimenting. I chopped the sausage into coins.  I put it in the pan with the frozen veggies.  I added garlic and other seasoning.  When they were close to being done, I added the drained can of beans. It was my first time having this meal, but I liked it.  I have tried other meatless italian sausage, but I think this one is my favorite so far. 

Meatless Monday: Veggie Tomato & Basil Pizza Burger

For this meatless monday, I chose something simple and easy for dinner.  I bought a box of Morningstar Tomato & Basil Pizza Burgers.  It was fast and easy.  I have had these burgers before.  I really, really like them.  Of the veggie burgers I’ve tried, Morningstar are my favorite.

I also had a green smoothie for breakfast.  There are entire websites devoted to sharing different green smoothie recipes.  The one I had was better than I expected, but not quite where I want the flavor to be.  I have to play around with some recipes that I’ve found.  I will share when I find one that I  like.

Meatless Monday: Avocado Burrito

I have decided to participate in Meatless Monday.  The purpose is for people who normally eat meat to take a day off.  I will share my meatless monday meals here.  For my first Meatless Monday I had an avocado burrito.  I found the recipe on YouTube.  I changed it slightly by adding rice and leaving out the cheese.

I loved it.  I will definitely have this again.  The cilantro and lime juice really give it a great flavor.  The other great thing about this recipe is that it is easy to add meat to it if you are having dinner with someone else who wants it.

What You Need:

  • Tortilla
  • Cilantro
  • Lime (lime juice)
  • Tomato
  • Avocado
  • Salsa
  • Onion (I used red onion)
  • Rice


Chop all of your ingredients.  Place the rice on the tortilla.  Add all of the other ingredients on top of the rice.  Add salsa.  Squeeze lime juice over the other ingredients.  Wrap it up.  Enjoy!
